Turkish kitchens run on a handful of home-grown cookware brands, and each one is really a material: Korkmaz and Emsan for stainless steel, Karaca and OMS for coated non-stick, Porland for porcelain, Lava for enamelled cast iron and Soy for hand-made copper.

Pick the material first, then the brand.
- Stainless steel: Korkmaz (since 1972, made in Tuzla and Kandıra) and Emsan, both with induction-ready sets.
- Non-stick: Karaca’s BioDiamond and OMS granite-coated pans; at OMS, look for “indüksiyon taban” in the name.
- Heavy and slow: Porland porcelain, and enamelled cast iron from Lava, made in Eskişehir since 2010.

Will it work on your hob?
The magnet test
An induction hob heats the pot itself through a magnetic field, so the base has to be magnetic. Hold a fridge magnet to it: if it sticks firmly, the pot works. Copper, porcelain and plain aluminium do not, unless the maker adds a steel plate to the base.
Gas, electric and ceramic glass heat almost any flat base. Open fire and barbecue are another matter: only some makers allow them.
Pick a pot to light up the hob. Green means it works: gas and electric heat any flat base, and for induction and open fire the maker says so. Red means it cannot; amber, that it depends on the model; grey, not stated.

Porland brings porcelain to the hob with its Cookland range. The name matters: Cookland Induction has a base for induction hobs; Cookland Fire works on every heat except induction.

Copper by hand: Soy
Soy is the odd one out: not a factory brand but a collective of copper-, silver- and goldsmiths working since 2010 (about us). Its pans are 999‰ copper, Soy says. They are lined with tin or silver, the handles are a bronze alloy of Soy’s own, riveted by hand, and larger pieces carry a serial number.

What is the best Turkish cookware brand?
It depends on the material. For stainless steel, Korkmaz or the cheaper Emsan; for non-stick, Karaca BioDiamond or OMS granite; for slow cooking, Lava cast iron or Porland porcelain; for copper, Soy.
